Vinification: The two grape varieties are harvested and vinified separately, then blended and aged. This is followed by maturation and fermentation at controlled temperature in stainless steel tanks, malolactic fermentation and, in part, long élevage in French oak barriques of first and second passage. At all stages we take care to eliminate the use of sulfur dioxide
TASTING NOTES.
Color: Intense ruby red with violet hues
Nose: The nose offers a refined composition of vegetal and fruity scents, with subtle references to herbs, plum, black cherry and sweet spices. This is followed by heady tertiary notes of dark tobacco, leather and ink
Taste: Fresh, warmly elegant and richly structured with round, firm tannins, hinting at a long aging perspective
PAIRINGS: Ideal to drink with some pasta with sauce, roast meats, game and stewed fish
