Vinification: Tommasi's Valpolicella Ripasso Classico Superiore comes from the Conca d'oro, La Groletta and De Buris vineyards, located in the hills of Sant'Ambrogio, in the historic Valpolicella area. It is made from Corvina Veronese, Rondinella and Corvinone grapes, harvested by hand in late September. Fermentation takes place in stainless steel tanks for about 9 days, then the must re-ferments on the Amarone pomace for about 12-13 days, with continuous daily pumping-over. Vinification takes place in Slavonian oak barrels for about 18 months, and for a further 6 months in bottle
TASTING NOTES.
Color: Intense ruby red
Bouquet: The nose is rich and spicy, enriched by pleasant notes of black pepper and hints of raisins
Taste: The palate reveals itself to be full, soft, with elegant notes of ripe cherries
PAIRINGS: Perfect with red meats and white meats, it is ideal paired with aged cheeses
